About this stall
Family cheesemakers from Stow-on-the-Wold since 1987. Raw-milk cheddars and territorials.
Three generations of cheesemakers in the same stone cellar in Stow-on-the-Wold. We work with three local dairies within twelve miles, age every truckle by hand, and turn out cheese the way our grandparents did — slowly, and on its own schedule.

Properly mature, clean finish
Mature Cheddar (200g)
Sharp without being aggressive, with that lovely crystalline crunch you get from a long age. Slightly drier than I expected — a touch of butter on the cracker fixed it.
